I impulse-bought some mint, and now I'm not entirely sure what to do with it. It's very nice-looking and minty-smelling.

I've always wanted to try a mint julep. Perhaps now is the time?

The other suggestions are excellent, but I'd also like to note that mint freezes pretty well! I coarsely chop whatever I have left over, pack it into an ice cube tray, cover with water, and freeze solid. It winds up softer-textured than fresh mint, but can still be used in beverages or as a seasoning.
