I impulse-bought some mint, and now I'm not entirely sure what to do with it. It's very nice-looking and minty-smelling.

I've always wanted to try a mint julep. Perhaps now is the time?

The other suggestions are excellent, but I'd also like to note that mint freezes pretty well! I coarsely chop whatever I have left over, pack it into an ice cube tray, cover with water, and freeze solid. It winds up softer-textured than fresh mint, but can still be used in beverages or as a seasoning.

Mint is great in salads -- add some to Greek salad or tabbouli. I also had a really good soup last year with mint in it; it was mostly typical fall vegetables (onion, carrot, potato, squash, kale, white beans), but it had some chopped mint, too, which gave it a whole different flair.

Mint is also good in lemonade and it's an ingredient in tzatziki, the Greek yogurt dip/sauce/condiment and also mast o khiar, the Persian version of the same thing.

Fresh mint tea.

And, as a UK person, I feel culture-bound to mention the possibility of acquiring some lamb and making mint sauce to accompany it:

[personal profile] danceswithwords has a mint pesto recipe, if you scroll down in this entry:

"Pasta with mint pesto, peas, and ricotta salata" sounds like a very good idea.
