I have three Japanese eggplants this week.

I don't really like eggplant.

My default would be to chop them and make them part of a red sauce for pasta, but I'd be happy to entertain other ideas.

You don't like eggplant?!?

This spread turns out amazing with Western eggplant and is supposed to be pretty good with Japanese eggplant, too. Don't judge it when you make it -- it's kind of blah the first day, but after it's been in the fridge a while, it's really good. Some people who do not like eggplant have liked it (though sometimes people who don't like eggplant still don't like it, which is fine, because more for me!).
