Mint

I impulse-bought some mint, and now I'm not entirely sure what to do with it. It's very nice-looking and minty-smelling.

I've always wanted to try a mint julep. Perhaps now is the time?

Mint is great in salads -- add some to Greek salad or tabbouli. I also had a really good soup last year with mint in it; it was mostly typical fall vegetables (onion, carrot, potato, squash, kale, white beans), but it had some chopped mint, too, which gave it a whole different flair.
